Eggs are high in good quality protein, contain antioxidants, and are high in choline (which aides in healthy brain function). Not to mention they are only 70 calories each and are very inexpensive! Don't be afraid to think outside the box: eggs aren't only for breakfast or be crazy and have breakfast for supper!
Here are a few ideas for including eggs into your healthy eating plan.
Egg-Salad
6 hard boiled eggs, peeled and chopped coarsely
1/4 cup light miracle whip
1.5 tsp prepared mustard
1.5 tsp sweet pickle relish
1/2 cup celery, chopped finely (or green onions)
Dash salt
1/8 tsp black pepper
Combine all ingredients and serve on toasted 100% whole wheat english muffins, bread or crackers.
Breakfast Burrito
Place scrambled eggs, 2% cheddar cheese, and salsa in a warmed whole wheat tortilla.
Breakfast Sandwhich
Place scrambled egg or fried egg (use cooking spray instead of oil in pan when frying) and a slice of cheese in the middle of a toasted 100% whole wheat english muffin.
Egg Toast
Add hard boiled egg slices on crispy, buttered toast (instead of butter use Smart Balance spread).
